I use organic cream, a bit of sugar to sweeten the ganache. No preservatives in my product, so they should be eaten no more than two weeks after purchase. They should alway be kept in the refrigerator and covered! I also use butter with no salt. Other ingredients, like fresh fruit come from local farmer stands in the area. I use a combina

I use a combination of Calibut and Valhrona chocolate base with at least a 54% cocoa!
